Thomas Keller is chef and owner of the French Laundry and the more casual Bouchon in Yountville, California. He was the chef of La Reserve, Raphael, and Rakel in New York before moving to California.

This is the type of book you read throughout your life. As a novice you gain insite, read it again as a Sous you gain knowledge, and read it again as a Chef you gain wisdom. A MUST HAVE for all cooks!
