John Thorne pays serious and intelligent attention to a number of culinay subjects, some of which seemed like minor matters until he explored them. Any thinking cook will love this book. Anyone who sees a recipe as the beginning of a conversation with its writer, rather than a set of rules, will love this book. Anyone who just loves good writing will love this book.
