This is a great book for the novice who wants to learn the basics of tamale making. It will take you step by step from how to prepare a basic masa, make various fillings to wrapping and cooking the tamale. It has recipes for both savory and sweet tamales. This is an excellent resource that I use frequently whenever I want to try something new or just cook an old favorite. It also had more advanced recipes. It is well illustrated easy to follow with interesting facts about the various regional ethnic tamales.
