Ad hoc at home is different. I find it inspiring; a chef thinking deeply about food. Keller feels the rightness of his ingredients in the same way a veteran aircraft mechanic feels the rightness of the mechanical thing or the sage doctor feels the imbalances of his patients. Ideas and insights make this book, the recipes are just the canvas for expressing and executing the thoughts stimulated by the text. This book is the distillation of a passionate persons years of effort. It is a brilliant book, if you only buy one cookbook this year, make it this one. -C.
