This book has been a real help in my baking. There is a lot of information provided besides just recipes. Color pictures of some recipes are included. Substitution guidelines are provided plus ingredients are listed by weight and measure. Although I thought I'd never want to start measuring flour before making cookies, I find what I make comes out so much better, measuring is actually faster, and following their guidelines is a great help. Would recommend for anyone interested in baking. Great educational helps.

I got turned on to KAF by the recipes on their excellent website ( As a long-time baker I had to have this in my collection. There are very detailed instructions on breads, cobblers, desserts and everything you can think of. I especially liked the raspberry mousse cake and I made 72 of their quiche bites for a party recently. Outstanding! You can really trust anything by King Arthur Flour for their recipes but also for the educational value of their books.

I find this book priceless not for the recipes (although I use and like them) but for the basic information, the science, if you will. If some recipe didn't work out, no matter the source, I check the Companion for ideas on how to fix it.
