Of the 15 sausage cookbooks I have in my collection, this is one of the top three. We have prepared several of the sausages and found them flavorful and true to each style. We make the Iowa Farm Sausage in 25 lb. batches. In addition to the sausage recipes, there is a section on using them. Some of the recipes are familiar (Beer Braised Brats) and some are new and unique (Hot Potato and Sausage Salad), as well as delicious. The recipes are presented in a clear and easy to follow manner and include some background on the style or sausage.
