This is a marvelous book, still in print because no one's ever surpassed or even matched it! Its focus is on eating American while substituting tofu for foods containing lactose or dairy. It is not a hobbyist's manual, like so many are, adding tofu to foods as a meaningless gimmick. Nor is it a course in Asian cooking, as so many others are. I had a pile of tofu books from the library, and this was the standout for my needs (I need dairy-free). So happy to have found it! Most ingredients are easy to find, and the lists of ingredients tend to be short. Another plus! And Jessica's price is better than Amazon's. This is definitely the book to have.
