When I entertain, it is fun to sometimes include an 'amuse' course. Francois Payard introduced me to a lovely collection of ideas, as well as tips on presentation and serving dishes. I have repeatedly made his Chilled Asparagus Soup, Gougeres, and Crispy Polenta with Pesto and Parmesan. These are not tricky and most do not call for hard-to-find ingredients. You can also use these recipes as appetizers. I think every level of cook will find something to try and be pleasantly surprised by the results. A great addition to any cookbook collection.
