I have great pleasure in writing a preface to this classic cookery book. which was writtten by one of the first people to raise food and cooks to their rightful places in society. 1080 Recipes has now been translated into English, with Simone's daughter Ines helping to update and revise its recipes. This English edition proves that, for Simone Ortega, cooking has no borders.
